This easy cupcake recipe will help you to bake perfect cupcakes, and will soon become a staple in your baking repertoire! In this series I will be sharing recipes for basic baked goods, think perfect scones for afternoon tea, a classic Victoria sponge cake , and ultimate gooey chocolate brownies! So basic in name, but definitely not basic in taste and enjoyment. This series is mainly for beginner bakers who want to learn the secrets behind baking, because getting the basics right is the best place to start. More experienced bakers will really enjoy it too, as there are so many delicious recipes to try out! This time it is the turn of Vanilla Cupcakes. This Vanilla Traybake Cake is a versatile bake that's easy to make, and fun to customise for any occasion. It features a fluffy vanilla sponge cake with a smooth vanilla buttercream on top. I've decorated this sheet cake with sweets and sprinkles, but you can decorate with your favourite sweets, chocolates or fruit. It's brilliant for birthday parties, serving to a crowd, or for a bake sale. For the full recipe with measurements, head to the recipe card at the end of this post. To make the cake, mix together the baking spread and caster sugar, for minutes until fluffy. Then whisk in eggs and vanilla extract. Add the milk and self raising flour, and gently whisk or fold in. Spread the mixture out into the tin. Bake the cake for minutes or until a thin skewer inserted in the centre comes out clean.
