I treated myself to a fancy staycay a few weeks back, and whilst I was in the area, I decided to check out Chester White Cured Diner. Chester White has always been on my to-eat list, but it was bumped up a few dozen places after my dinner at Buffalo Dining Club. Not only are they similarly-styled restaurants, they were also formerly owned by the same people. So if Buffalo was amazing, then surely Chester White can only do so wrong. The whole experience was capped off by the front of house, which was run by one of the proprietors himself, who treated both newbies and regulars like good friends, calling us by name the entire night.

Potts Point 0km. Chester White is one of the funkiest and hippiest eateries that I have been for a while. It took us 20minutes to secure 2 seats on a Friday night. A cheerful and friendly barman suggested Negroni to start. The menu is kept simple but with stunning food.

The guys behind cured meat diner Chester White — Nick Sullivan and Stu Curran — have taken the phrase cottage industry to heart. This cosy spot inside a converted old Potts Point terrace is named after a breed of pale-skinned pig, pictured on the wall and menu, prompting customer to make an oinker of themselves. Dining at Chester White is much like a very well-researched picnic in a bar environment: high-quality salami and prosciutto shared plates, lots of cheese, cocktails and vino aplenty. The kitchen, as it is, is behind the bar, with meats dangling from hooks. It's a very canny and affordable way to operate a tapas bar, which is how Chester White functions best. You wouldn't come here to get a feast, but instead while away a few hours with something to munch on and some drinks. There's a nod to s Americana, with retro bar stools, blues tunes playing and an almost New Orleans-like ground floor balcony. You'll also find the staff often sporting boots, denim, western-style shirts and hats. It's a deliberately laidback premise with a buzzing atmosphere and affable staff.
