I really like cavalry because the pursuit stat shortens wars considerably assuming you can in straight up confrontations. Nothing is more annoying than defending against a crusade and the enemy army splitting into a pieces sieging different things after the first fight. Their stats are slightly better than armored footman, but they counter spearmen and archers armored footmen just counter spearman. Quilted Armor innovation. But they are not very good in straight up combat which is why heavy infantry is probably the most well rounded overall having no terrain penalties and are quite beefy in attack and defense. For example, Caballeros are actually worse at pursuit, but have much higher screen than stock light cav. The traction-powered mangonel is easier to operate than the onager while also boasting a faster rate-of-fire. They are cheap too, so arguably they are the one unit where your "bang for the buck" approach makes sense outside the early game - siege engines make the biggest bangs for the fewest bucks. So, situational awareness is really important in many more ways than just terrain and while it's useful to use the terrain to your favor, it's best to be prepared to not be impacted by terrain ; mixed composition seem to benefit the most from this assumption; as a final note, I'd say that an ideal jack-of-all-trades regular men-at-arms regiment composition, taking value into consideration, would be for 8 regiment slots : 2 light footmen, 1 bowmen replace with crossbowmen ASAP , 1 pikemen, 1 armored horsemen, 1 armored footmen replace with house guards if available , 1 light horsemen and 1 siege engine.
