Well, I think the skip currently is not really necessary. You can do the quests while leveling, they are quick and give good XP, they give gear for example you get the mats to instantly start a workorder for a up to chest piece in the plains and profession equipment which is cheaper than buying them in the AH, particularily now as we see even green profession gear costing G and more for some professions. Sure, if you level only over dungeons or pvp it's nice to have, so obviously I won't complain about having the option ingame. I don't know what server you are on, I just brought a ton of green profession gear and sold them to a vendor for a profit.
