Start with a golden disc of pillowy, buttery rustic flatbread topped with fresh clams, fermented chilli, parsley and lemon. Or a seafood salad of mussels, shaved calamari and poached prawns with briny sea succulents and pale treviso leaves, finished with a house-made summer tomato vinegar. Reposing in a large, brightly lit building in central Melbourne, the restaurant is hailed as a space for all seasons and reasons. The comfortable leather booths and exclusive high tables invite both large family lunches and intimate romantic evenings. An upstairs private dining room is also available to parties of up to 12, offering seating on the mezzanine overlooking the bustling restaurant. The wood-fired oven is the centrepiece of the open kitchen, spinning out classics such as dry-aged Muscovy duck breast with Corella pear and liquorice, and grass-fed tomahawk. A meal would be incomplete without a cocktail, many of which are Prohibition-inspired, or a glass of wine.

When it comes to sourcing ingredients, McConnell emphasizes how Gimlet works with as many local suppliers as possible and only uses produce that is in season. In highlighting the best of local ingredients, sustainability and community are prioritized, further underlining their unique approach to not only food but hospitality as well.
