On the restaurant side, Heritage will offer slow-smoked Texas barbecue, sausage, and cooked-to-order hamburgers made with ground beef directly from the butcher shop. Seasonal, house-made sides will be prepared with the same local ingredients sold in the market. Even the real sugar sodas are sourced from a small, north Texas producer. Introduced by a mutual friend and local rancher, an experienced butcher with a heritage in the food industry and a physician with a particular fondness for butcher shops began dreaming about what they could build together for the Texoma community. Artisan butcher Pete Gonzales, who will serve as the General Manager, began searching for the ideal facility and location to serve future Texoma customers.
