How long have you been teaching guitar? I have to admit that teaching guitar was something that had never occurred to me. What would you highlight about this work? And something especially noteworthy? A terrific flamenco connoisseur with a fabulous collection of guitars who does everything in his power to spread the flamenco word throughout the world. I was with him for a few years. Then I went off on my own path, although I had a great deal of contact with Rafael Riqueni who also gave me classes, and with whom I played second guitar for a few years.

A veces no es necesario hacer platos de vanguardia. El Thunnus alalunga , como otros pescados caballas, sardinas… bajo las escamas tiene una piel a la que se adhiere una importante capa de grasa. Cuando se quita la piel, la grasa -y sus famosos Omega- se van con ella. Para algo se trabaja con pescadores, agricultores, ganaderos…. Tampoco los coqueteos con Oriente acaban de convencer. Las sardinas -excelentes- pueden disfrutarse con o sin las texturas de soja con las que se sirven.
