Set the scene for a memorable meal with a starter of bluefin tuna tart, with edamame, blood orange, wasabi foam and tarragon, or confit white asparagus, pickled walnut, sauce gribiche and smoked olive oil; before swordfish, salted squash, spinach, ajo blanco and red pepper dressing. Perhaps dry-aged pork belly, green mustard, BBQ sugar loaf cabbage and nectarine tempt, finishing indulgently with coconut sorbet. This is a variation of a classic brulee that suits the colder months with flavours of caramelised sugar and dark chocolate that pair refreshingly with a mint spiked gelato.
