One taste of Texas brisket convinced Clay he needed to get back into the game. Clay returned to Texas to tour iconic BBQ restaurants seven times and had conversations with many of the well-known owners. Clay and Susan finally found an ideal location in a part of Gilbert that was more green fields than human development. Clay partnered up with his son, Spencer, whose real-estate background helped secure the property and begin the renovation. The Caldwells bought, gutted, and remade the residential home into a charming spot done in farmhouse style with a large dining room and a backyard full of picnic tables. Clay, Susan, Spencer, and his wife, Alisa all have an active role in running the restaurant. We want our customers to feel like they came over to our house for a backyard BBQ.

Moist and tender mesquite smoked prime brisket. Your choice of lean or fatty brisket. A Barbeque Classic. Mesquite smoked sausage, mixed with pork and beef. Flavored with jalapeno and creamy cheddar cheese. Includes two sausages per order.

Awesome food, great sauces. Got there right as they opened the door and there and there was already 15 people in line. Line went really quick. Wheelchair accessibility: All flat, no stairs. Service, atmosphere and food was phenomenal! Definitely try the brisket, Turkey, pulled pork, Mac and cheese, banana pudding and cornbread casserole! The parking lot is a bit challenging if you have a truck…aside from that we will be back and park elsewhere to walk over. They use both mesquite and pecan for their grilling and smoke all day to perfection. We got the 'family of 8' meal and it is a fantastic value! Great outdoor vibe, and staff checked on us often.

Farms, sprawling developments and new businesses are sprinkled on either side of the road. Take a turn down Nunneley Road and what initially appears to be a small house on your right is soon to become one of your favorite places for barbecue in the East Valley. Clay took a trip to central Texas, and his passion for barbecue was reborn. Clay and his wife decided to get back in the barbecue game and founded Caldwell County BBQ, a play on their last name and a famous county in Texas known for its barbecue. Clay also incorporates many Southwest flavors, grinding and roasting green chilis to use in sauces and sides to give a nice heat finish. We smoke it until it gets a good rich color, mahogany color, a great smoke ring. When sliced, the meat nearly crumbles, has an excellent smoke ring that preserves the flavor, and packs a well-seasoned punch of a taste. I would recommend trying the pulled pork, which was smokey and hearty. The pork ribs seasoning greets you at the lips, and the meat falls right off the bone. For sides, the beans are a must and are slow-baked, smokey, with that slight heat component.
