From his own desire to grow enough food to sustain himself, came a business that gave him the opportunity to grow these magnificent varieties from seeds sourced the world over. Footjoy Brewfarm will be an authentic farmhouse brewery, restaurant, year round event space, and specialty produce farm — all in one. It would not only be a unique place to get together with friends and family, as it would also provide an opportunity to truly connect with where your food and beer comes from. Currently, there is no other space like this in the Midwest. Another aspect of Footjoy Brewfarm is a little more complicated, but nonetheless extremely important for the region, and potentially — the world.

In the past few years, though, Forsberg has become interested in a segment of the crop world that few have tackled: heirloom and historical grain varieties. He wants to use them to fuel a restaurant and a brewery, using grains no one else in the world is using right now. The whole operation, to be called Footjoy Brewfarm, will be on a working farm and supplied by it. Forsberg has launched a Kickstarter campaign to raise funds for the operation, which will be located just across the Minnesota border in Wisconsin. Forsberg then had to grow that small amount and harvest those seeds to plant the next year, and so on. The nutrition content of the heirloom grains tends to be higher, and Forsberg sees himself on the cutting edge of a new trend. Chef Lenny Russo, who has been buying produce from Forsberg since the farmer walked into W. Frost barefoot almost 20 years ago with some wacky vegetables, thinks his friend is just the one to pull it off. The rarified produce grown at Footjoy, like cuke nuts and alpine yellow strawberries, is the kind of stuff fine-dining chefs go crazy for, Russo said. Forsberg said the goal is for 90 percent of the produce and animal protein used at his restaurant and brewery to come directly from the farm within two years. The kitchen will use a wood-fired oven to make pizzas and other items, like small plates featuring Footjoy produce. Forsberg envisions raising pigs, cattle, ducks and chickens on the farm, too.
